Turkish specialty brand built to rival global chains, roasting at Everbean.

Founder İbrahim Demir set it up after a management job at BTA Food & Services, which runs food service in 19 airports. Everbean, the brand's own roastery in Kağıthane, roasts Rwandan Bourbon grown at about 2,000 metres, alongside lots from Ethiopia, Sumatra, Brazil, and Mexico. Single origins include Guatemala Huehuetenango and Rwanda Karambi, which is also bottled as a cold brew.

The name joins the French noir and the English pit, meaning a coffee stop. Its Istanbul shops are in Pera and Moda.

At this shop

The shop sits on General Yazgan Sokak in Asmalı Mescit, among Pera's ornate stone buildings, its shopfront trailing greenery over pavement tables. Inside, a cascade of amber glass bulbs hangs like a chandelier above the counter, next to a spiral staircase up to a small mezzanine. Pastries are laid out along the counter while customers sit outside with their coffee.
